GOOD FAT BROWNIES[1]

 

Makes 16 Brownies

 

Ingredients:

          One 4 ounce bar of premium BITTERSWEET chocolate –

                   broken into small pieces

          One stick of salted butter (8 tablespoons)

                    OR [4 Tbsp. olive oil and 4 Tbsp. butter]

          1 cup sugar

          3 large eggs

          1/3 cup flour

          pinch of iodized salt

          1 ½ teaspoons of premium vanilla extract

          1 ½ cups of walnuts, toasted and chopped

 

Directions:

 

1.                   Preheat over to 350 degrees.

2.                 Place 1.5 cups of walnuts on a jelly roll pan.  Bake the nuts until lightly toasted and crisp.  Watch that they do not burn!  Cool, then chop them.  Set aside.

3.                 Grease a 9 x 9 inch baking pan.

4.                 In a heavy saucepan over low heat, melt the chocolate bar and butter.  Add sugar once butter and chocolate are melted.  Stir well.

5.                 Set chocolate mixture aside to cool.

6.                 Beat the eggs in a medium bowl.  Whisk in the flour, iodized salt and vanilla extract.  Add the nuts.  Stir well.

7.                 Scrape the brownie mixture into the greased baking pan.  Back for 30 minutes.  Do not overcook.  They should be moist, not dry.
